Quick & Healthy Bites

I'm constantly looking for creative, quick, healthy snacks.  Here are some great suggestions from nutritional expert Cate Munroe (Cate's Nutrition Kitchen).  Enjoy!

Snacking doesn’t have to be plain or boring to be healthy. Whether you’re entertaining kids, hosting a healthier happy hour, or would just like something special for yourself, there are plenty of decadent small dishes to enjoy that are easy to make and require minimal clean up. With the creative ideas below, you can savor each bite and satisfy your hunger!

Cate’s Creations

Banana Roll
Peel a banana, dip it in yogurt, roll it in crushed nuts & freeze.
Apples on a Log
Spread celery sticks with almond butter & top with diced apple.
Pretty Parfait
In a tall glass, layer yogurt with blueberries & slivered almonds. 
Inside-out Sandwich
Spread mustard on sliced turkey, then wrap around sliced cheese & red pepper.
Cheesy Kabobs
Use toothpicks to skewer cubed raw milk cheese with apples, pears or grapes.
Shrimp Boats
Layer endive leaves with cooked, diced shrimp & a spoonful of pineapple salsa.
Greek Bites
Layer sliced cucumber with a spoonful of hummus & sprinkle with diced tomatoes, kalamata olives & feta cheese.
Green Devils
Cut hard-cooked eggs in half, remove yolk & mix with guacamole, then spoon mixture back into egg whites.
Banana Smores
Freeze a banana for 30 minutes, peel, slice & serve layered with dark chocolate squares & creamy almond butter.
Cinnamon Yogurt
Mix 1 cup of Greek yogurt with 1 TSP of cinnamon & Stevia (to taste). Stir in 1/2 cup freshly sliced strawberries.
